Energizing Spring Salad You’ll Love

I have been loving this salad. This last week has been beautiful in Seattle. The sunshine and warm weather have me craving light, raw and fresh fruits and veggies. This salad combines loads of greens, crisp veggies, nuts, fruit and more to make a totally satisfying and energy boosting lunch or diner.


    • 1 small apple chopped
    • 1 cup leafy greens of your choice
    • 1 cup shredded green cabbage
    • 1 cup shredded purple cabbage
    • 1/2 cup shredded carrots
    • 1/2 avocado sliced thin
    • 1/4 cup dried cranberries
    • 1/4 cup pumpkin seeds

 Lemon Tahini Dressing

  • 1 tablespoon olive oil
  • 2 tablespoons roasted tahini
  • 2 tablespoons rice vinegar
  • 2 teaspoons lemon juice
  • 1/4 cup warm water
  • combine all ingredients and mix well. to thin the dressing simply add more warm water.

In a large bowl or extra big mason jar (my favorite way to enjoy) layer all ingredients. I put greens in the bottom, then cabbage, carrots, apple, avocado, cranberries and top with the seeds. Add your dressing and give a toss.
