
As much as I love the holidays I am ready to get back to my routine and usual way of eating. To kick off the New Year I decided to commit to two challenges including the Whole30 Challenge. The Challenge involves committing to eating real, whole foods and eliminating sugar, gluten-containing grains, dairy and alcohol for 30 days. I modified it a bit to fit my Ayurvedic routine and my mostly vegetarian diet. One nice thing about the challenge is finding new recipes.
Chia seeds are one of my favorite super foods. They are high in protein and fiber and are nutrient dense, which means they pack a lot of goodness into a little seed. What I have really noticed is that when I eat chia for breakfast I have more consistent and sustained energy. For this recipe I used Qia superfood cereal, which is a mix of chia seeds, hemp hearts and buckwheat, but using just chia seeds would work as well.
Spiced Apple Chia Seed Breakfast Bowl Recipe
Ingredients
- 1/2 cup almond milk
- 2 tbsp Qia super food cereal or chia seeds
- 2 tbsp almond butter
- 1 -2 dates, pit removed and roughly chopped – I used 1 but use 2 if you like it sweeter
- ½ tsp cardamom
- ½ tsp ground cinnamon
- 1 small apple, cored and sliced
- optional toppings like pecans or shredded coconut
Instructions
Mix all the ingredients, including apple, in a blender until thick. Transfer to a saucepan, stir and heat on medium low until warm. Serve with chopped pecans, shredded coconut or your favorite.
Note: Another great option is to swap out the apple for a banana, almond butter for peanut butter and spices. You can also add a teaspoon of raw cocoa and you can have a chocolate, peanut butter, banana breakfast treat.
