
Looking for a new and interesting way to make pizza spectacularly healthy? Check out this butternut squash version. It’s not your traditional pizza recipe but I loved it. Loaded with fiber, calcium, iron and vitamin C its a great way to clean that butternut squash out of the fridge and up the nutritional value of your pizza. Plus is super simple to make and tastes amazing.
Butternut Squash, Spinach & Feta Pizza with Toasted Pine Nuts & Caramelized Onions
Ingredients
- ~ 2 lbs. butternut squash, cut into small cubes
- 1 medium red onion, thinly sliced
- 2 tbls. ghee, divided
- ~ 4 cups spinach
- 1/4 cup feta cheese, more to taste
- 1/4 cup toasted pine nuts
- 2 cloves of garlic, minced
- salt and pepper to taste
- 1 pizza crust (I use Bobs Red Mill, gluten free)
Directions
Heat oven to 425F. Coat glass dish with oil. Toss squash with 1 tbls. ghee, salt and pepper to taste. Roast until tender, tossing occasionally. Let cool then smash in a bowl. Add the minced garlic along with a tbls of ghee to the squash.
Heat a skillet over medium high heat, caramelize the onion and set aside. Then toast pine nuts and set aside. Next cook the spinach for about 1 minute, until just wilted. It should still be bright green.
Prepare the dough on a cooking stone or baking sheet. Spread a layer of squash mix on the dough, ~ 1 1/2 cups. Then top with spinach and onion. Bake for ~ 8 minutes. Add the pine nuts and cheese and bake for 2 minutes more. Timing may vary according to your dough recipe instructions. You may need to cook your dough a little first then added the toppings. Adjust as needed. Enjoy!
